Jersey pocket, no Ziploc or anything. My phone is waterproof.

I wear mountain bike shorts to ride everywhere so I keep it in my shorts pocket. However, when I don't wear those Mtn bike shorts and instead wear stretch shorts I do what others have said, Ziplock bag in center jersey pocket to protect from sweat. I would not mount the phone to the bike. The constant road vibration "could" cause problems.

I’ve gone on tours for up to two weeks with mine in a zip-loc bag in my jersey pocket. Never been an issue.

... on your drop bar road bike? I'm really tempted to just leave the damn thing at home when I go riding, but the advantages of taking it definitely outweigh the disadvantages. But where to attach/store it so it isn't an ugly eyesore? Attached to the stem on a Quadlock or similar mount? Practical, but boy does it look ugly. Maybe stuffed in your back jersey pocked where it can get all steamed up with sweat? Hmm not ideal. Attached somewhere else on the bike? Suggestions?

No, sir. Not my kind of adventure. There was a time when I didn't mind riding when it was wet and/or cold. I was a lot younger then...and there weren't cell phones to worry about keeping dry.

Center jersey pocket inside a Rapha waterproof essentials case along with my wallet. Need the phone anyway for Wahoo live tracking.
Tried a ziploc bag, those don't last and I think it's wasteful to go through a bunch of plastic. Maybe a freezer bag would last longer, but the case wasn't expensive and is a lot nicer.

Jersey pocket in ziploc bag.
I probably don't need the bag for waterproofing anymore, so maybe just out of habit now. I also usually toss my DL, insurance card, credit card and some cash in there too.
House keys go in the other pocket. The 3rd pocket is for snacks.

In a small ziplock sandwich bag in a small burrito handlebar bag (3" x 8.5"). Before that in the same plastic bag in a center or side zippered jersey pocket or a cargo pocket. The small HB burrito bag works great as it is easily accessible and protected by the drops from side impacts or falls. I do not use the phone while riding, so it is for emergency or photos only.

A lot of people think the U.S. bike boom in the early 2000s was due to Lance Armstrong, but it was really because the ubiquity of cell phones finally gave people the security they needed to ride more than one block from home.
