I have a 175mm Ritchey Logic with original silver rings 46/36/24 but it could be a double if you just leave the inner ring off. I know I have a 180mm Specialized flag crankset, probably have a 175mm too but not sure. IMHO these don't seem the same vintage as your frame but without decals they would make good compacts I guess. PM me if you're interested and we can go from there.

I have most, if not all those components in the basement. But I'm not for sale, nor am I going to sell my soul to the devil out of convenience.

What's devilish about building up a vintage bike ?

It's good to read that you are giving plenty of thought to this build.

Look forward to following it.

Some of your stated guidelines are mutually exclusive. Regarding a chainset you mention Mavic and Michael Sinyard "flag" sets. Both of these launched well beyond your "within five years" guideline. Stronglight sets are plentiful and not extremely expensive. A model 63 would be exquisite on the bike but it is both hard to find and costly. Models 49D and 93 are reasonable candidates. Model 93 launched in 1967. You might wish to include a Peyrard product in your list of possibles. They seem not so sought after by enthusiasts so bring lower prices. For example a NERVAR Star five pin would allow you to fit the T.A. cyclo-touriste c/w's with a range of 26-60T. Exotica such as Williams AB77, whilst period plausible, would likely be out on grounds of cost.

You mention the Maeda V GT rear mech. If you use one of these it would be best to find a G1 or a G2 with the closed steel cage. These launched ca. 1970. The V GT Luxe everyone loves did not launch until ~1972. Hope you can find a companion front to your liking designed for covered cable so you can make use of the frame's existing housing stop.

The GB stem/bar set mentioned earlier in thread is a bit late for the bike. It you wish to go GB you might wish to look for hex head with the Hiduminium marking. Should you desire allen two possible candidates would be FIAMME (quite rare) and the 3TTT Gran Prix.

All best wishes with the project!

guygadois, I'm sorry, but I can't find that front derailleur. It might take a few weeks, as I'll be traveling.
