Nice bike!
I'm a fan of SKS fenders. Have 2 sets mounted up ( see photo of my Non-vintage ride). I like them for several reasons over metal fenders. 1. They are inexpensive 2. Easy to mount up. 3. Lighter. 4. Make and conduct less noise. 5. They don't corrode , so need less frequent cleaning ( 1/2 the reason to install fenders is keep the bike from getting dirty and having to clean it all the time!).

A note on installs... when mounting rear fenders, a spacer between the fenders and chainstay bridge can help keep the radius of the fenders constant. So less fighting the fenders and it looks better. Does make wheel removal harder if you have classic non vertical dropouts though.

Took it out for a maiden voyage the other day and a heard a few creaks which are probably everything settling in but no rattles yet. The one thing I found weird was the sound of the free wheel amplified through the rear fender. It's not a noisy bike but suddenly, I could really hear the clicking of the hub and the gears changing as if they were playing through speakers. Kindeve annoying.

Thanks Old Coot, really got lucky with this one as it was in great shape and a quality build. There were no accessories on the bike other than a water bottle cage but the bike screamed add fenders to me and build me up as a randonneur bike. I'd not heard of SVS fenders but had I known of the Bluemels basic 45 mm I probably would have just bought these. Look super simple to install.
Normally I like the clicking noises too but it kinda sounds like someone is amplifying it through a tin can ha ha. I'll get used to it.
