+1 on Krabbe's The Rider for an insight on the mind of a bike racer.
For pure and simple road racing tactics there's an e-book Professional Road Race Tactics for Amateur Cycling Teams by David Harrison. It's an amazing primer on all things racing.

So turning round to look at the books I'd say:
The Rider, agree with everything that's been said.
Flying Scotsman, The Graeme Obree story. Brilliant and honest account of GO's life, the world hour record, the rainbow jersey, his decent into mental illness and suicude attempts. Amazing
I also enjoyed The escape artist by Matt Seaton, dunno if you can get it in the US, the story of a club cyclist an why he races.
Put me back on my bike: In search of Tom Simpson by William Fotheringham.
French Revolutions: Cycling the Tour De France By Tim Moore - Very, Very, Very funny.
